30 January 2019: Visit to the Agritur Fior di Bosco
We started at 9:00 am at the school Cesare Ritz and went on a two-hour drive to Trentino. Our destination was the Agritur Fior di Bosco, an organic farm according to Slow Food criteria. The journey there was a big challenge, especially for our bus driver. The way through the Italian mountain villages was not only steep and curvy but millimeter work.
The Lozzer family welcomed us with espresso and then led us across the farm. Mr. Lozzer showed us live the individual steps of the in-house cheese production. He explained to us that the colour and aroma of the cheese is influenced by the feed. If the cows graze on the alp, the cheese has an aromatic herbal taste and a honey-yellow colour. Cheese made from winter milk is lighter and only slightly aromatic, as the cows are fed with hay and organic meal. The Lozzer family wraps their cheese with wild herbs and hay to create special flavours.
Of course we also saw the grey cattle not only in the stable but also on the pasture. The participants then took the opportunity to purchase the various products in the attractively designed farm shop.
Afterwards the participants tasted the Slow Food Menu, prepared with love by the Lozzer family, which looked like this:
At first we served ourselves at the cheese buffet with homemade bread, afterwards we had Gnocchi from Polenta by „Storo“ with „fonduda di formaggio“ and bacon. For dessert we enjoyed Ricotta with wild berries.
Back in Merano, the students explored the old town together.
