31 January 2019: the „day of the open school door“ is close
The open day of the hotel school Cesare Ritz is very close.
Today the project participants started with the preparation of the Open Day on Saturday, 02/03/2019. Students had to choose a field: pastry, hot food, cold food, service, bar, decoration, marketing.
In addition, they discussed how many goods they will need and calculated the price.
The students who worked in the service prepared a tropical summer cocktail made from orange juice, elderflower syrup and pomegranate syrup. Another interesting thing was the preparation of coffee. The students practiced frothing milk to create a perfect „schiuma di latte“.
When making the „Caffe freddo shakerato“, it was possible to create a solid foam on the surface of the coffee. Through that a special taste is guaranteed.
The students who worked in the „Self Service“ prepared the vegetables for the cafeteria and got to know different cutting techniques. The teaching kitchen, in which they worked, was divided into „appetizers“, „main course“ and „dessert“. New to us was the Italian method of disinfecting chopping boards: with alcohol and fire even the last microbe was removed. Another new experience was cutting a fresh octopus. It had to be „beheaded“ first. Then, the tentacles were removed. After adding fresh peppers, potatoes and tomatoes we tasted the delicious octopus salad.
Some students chose “Pasticceria”. What surprised them the most was that orange jam was used to prepare a “Sachertorte” in Merano. This is typical for South Tyrolean cuisine. Here, alpine elements are mixed with Mediterranean cuisine.
After that, the participants explored the urban area. This time, the „Pur Südtirol“ was in our center of attention. In the two branches of the farmer and specialty stores, products from the “Meraner Land” are marketed ecologically and fairly, directly and without any middlemen. The goal is to be present from cultivation to processing and eventually the presentation in the shop. Nevertheless, it is possible to guarantee prices as in „off-farm sales“.
